Grandmother’s Marinated Sweet and Sour Tomatoes

I was enchanted by the premise of “Grandmas Project” as soon as I read about it in the New York Times. It is a web series in which film directors document their grandmothers as they cook. The women also share their stories, dreams, aspirations and give advice, and these short 8-minute films are so tender and heartwarming that watching them makes me feel as if I’m cooking with my grandmother Valentina. Although my cooking lessons come from diverse sources, learning from Valentina gave me a deeper understanding of food as a way of connecting with others, and that’s exactly what makes “Grandmas Project” so compelling.

Valentina learned cooking a young woman married to an army officer and stationed in a military town in eastern Ukraine. Living in the shared housing, she met other “army wives,” who hailed from different parts of the Soviet Unions and whose lessons gave her cooking a multicultural flair. Some of Valentina’s signature dishes were Georgian spicy soups, Armenian stewed vegetables and Tatar meat pies. She also had a big collection of pickled vegetables, which in her recipe books were marked as “from Zulia, Dagestan” or “Natalya, Saratov.” When we prepared these pickles together, Valentina told me about her friends, and even though she had no news from these women for many years, it felt as if they were present.

French Fig Jam

Jam has become such an industrial, mass-produced product that it might be hard to imagine making it at home. This is not the case in France–or much of Europe, for that matter. When I visited my friend on her farm in Burgundy, we drove around for hours only to discover that all of the stores were out of preserving supplies. We ended up ordering a case of jars from an online shop, because the figs were ripening fast.

My friend follows a recipe that has been in her family for several generations. We cut figs into quarters and weigh them to determine the amount of sugar. It’s 2 parts fruit to 1 part sugar. Figs are sweet, so we add lemon juice. As their juices melt into sugar, the syrup becomes pink, then purple, then burgundy, like the famous wines of the region. The green perfume of figs transforms as they cook. The fragrance of natural coumarin in their peel, the aromatic that smells of toasted almonds and cherries, becomes more pronounced and richer. The lemon zest gives the fig jam a twist reminiscent of Shalimar.

Rose Jam Kyiv Style

If I had to select a few ingredients that define Ukrainian cooking for me, it would be tomatoes, pork and roses. Tomatoes are essential for borsch, stuffed peppers, ragouts and salads. Pork is eaten in all guises, from lightly salted belly fat to roasted ham and garlicky sausages. Roses, on the other hand, are all about sweetness. Almost every yard in our small village near Poltava has a shrub of the so-called jam roses, usually the rosa damascena variety. Rose jam fills the Christmas pampushky, sweet doughnuts, strudels, crescents and crepes. Best of all, it’s eaten alongside a cup of black tea, a taste of Ukrainian summer at its most opulent. (Despite the common stereotypes, Ukraine is not covered with snow for most of the year. Not only is it large enough to contain different climatic zones, the summers are long, hot and bountiful.)

Ever since I’ve revived my great-grandmother’s roses, I’ve been trying different rose jam recipes, such as this delight I shared two years ago. This summer’s experiment is the Kyiv style rose jam, a variety of preserve made without a drop of water. Raspberries, strawberries, blueberries, gooseberries and cherries are the most common fruits used in Kyivske varennia, Kyiv style jam. The fruit is cooked in syrup and then drained and rolled in fine sugar. The result is more of a sweetmeat than the usual runny conserve. The rose jam Kyiv style is different, however. The rose petals are crushed with sugar and no cooking is required.

Sweet Orange Salt, Bitter Orange Sugar

Citrus is the main reason I’ll miss winter. The season of blood oranges, lemons and grapefruits is winding down in our parts, and although I look forward to the strawberries and cherries of spring, a perfect orange is enough to make me forget the cold, sticky snow and grey skies of Belgian winters. Orange rewards you with both taste and smell, since few other plants are so willing to yield their aromatic oils. With orange–or any other citrus fruit–you only need to squeeze the thick spongy peel to experience essence in its pure form.

It’s a pity to waste all of that goodness, and if I have organic , unsprayed fruit, I preserve the zest in a variety of ways: by candying, flavoring vinegar, mixing with tea, drying or perfuming salt and sugar. The latter is by far the easiest and most versatile way to capture the aroma. All you need to do is to grate the colored part of the fruit and mix it with the base ingredient of your choice.

Sweet Tomato Chutney with Pistachios and Raisins

That tomato is a fruit becomes obvious once you pair it with sugar or sweet ingredients. One of the main aromatic components of tomato, furaneol, is also called strawberry furanone by fragrance and flavor chemists, because it’s such an important note in the complex berry aroma. Incidentally, it’s one of the reasons behind difficulties with tomato accords in perfumery–they smell of red berries if there is even a modicum of sweetness in the formula. It’s therefore natural to treat tomato in much the same way as you would a fruit–cooking it into jams, combining it with sweet pastry or melting it down with vanilla and caramel for an ice cream sauce. Or you can make it into a sweet chutney to be served with grilled meat or rice dishes.

Chutney is an Indian sauce that may be raw or cooked, and the ingredients run the gamut from fruits and vegetables to beans and nuts. I’m a chutney fiend. I firmly believe that a dollop of chutney makes anything better–a sandwich, a bowl of rice, a piece of grilled chicken. So do many Indians, because not only do they excel in coming up with the most unusual chutney combinations, they don’t hesitate in pairing them together. For instance, spicy green coriander chutney is often partnered with a sweet date one. As you dip crisp eggplant fritters first in one, then the other and experience the explosion of flavor, you understand how silly is the whole idea of “less is more.”
